Do you have the MiniHUD main rendering (hotkey H) still on? If that is on, and the structure renderer was toggled on, and you enabled the Nether Fortress structure type, then it should work in single player.

Note that there is currently a bug in malilib that reverts configs when you change dimensions (use a portal). So toggle all of them on in the nether, or log out and back in after enabling them so that they get saved, before you use a portal. Basically currently when you use a portal, it will revert all configs to the values they were at when you first logged in to the world.
